the UNSINKABLE MATZAH BALL by Roberta You'll need: 4 lg eggs * salt & pepper * tsp. dried dillweed * matza meal * lg. pot of water w/lid * small butterfly net--(optional)....dahlinks, this is so you can catch them when they float out of the pot! (yields about 12)
In a small bowl, beat eggs well, along with the desired amount of seasonings. Add matza meal A LITTLE AT A TIME, while stirring, until the mixture is the consistency of LOOSE CREAM OF WHEAT (NOT loose concrete!) don't overbeat! Place in 'fridge.
Meanwhile, bring a large pot of water to a boil (will take about 10 minutes). Now take the the mixture out of the fridge. WET HANDS. Place about a tablespoon of mixture in hands and roll into a small ball (no larger than a golf ball) & drop into the pot. (They'll swell up, you hope!) Keep hands wet and repeat process till all are in the pot. Cover & simmer for 15 - 20 minutes.
(Note: When you put them in the pot and the DON'T float right back up to the top, you WON'T NEED a butterfly net!)
ps: A bad matza ball makes a good paperweight, so you can't lose....or, get a cookbook!
