                                              TO LIGHT YOUR CANDLES...The candles are placed in the menorah from right to left, but they are LIGHTED from left to right.  That is, the last one placed in the menorah is the first one to be lit.  (One, on the first evening, two on the second evening, three on the third, and so on, until the eight nights of candles are lit.  They are lit with the "shammes" (servant) candle and is not counted as one of the eight candles.  As the lights are lit, the following blessings are sung or recited:

Ba-ruch Atah A-do-shem, E-lo-he-nu Melech ha-olam, asher, kidd'-shan-nu b'mits-vo-tav, v'tsi-vanu, l'had-lick-ner shel Chanukah.

Blessed art Thou O Lord our G-d, Ruler of the Universe, who has sanctified us by Thy commandments and commanded us to kindle the lights of Chanukah.

Ba-ruch Atah A-do-shem, E-lo-he-nu Melech ha-olam, she a-sah nis-sim la-avo-tenu, ba-yamim ha-haim, baz-z'man ha-zeh.

Blessed art Thou O Lord our G-d, Ruler of the Universe, who has wrought miracles for our fathers in the days of old at this season.

LATKA DEFINITION!
A pancake-like structure not to be confused with anything the House of Pancakes would put out. In a latka, the oil is in the pancake. It is made with potatoes, onions, eggs and matzo meal. Latkas can be eated with apple sauce but NEVER with maple syrup. There is a rumor that in the time of the Maccabees they lit a latka by mistake and it burned for eight days. What is certain is you will have a heart burn for the same amount of time!
Now here's a REAL good latke recipe!...a "for real" recipe a-la good Jewish heartburn (the extra-strength Alka Seltzer version). Food processor is helpful, but not essential.
INGREDIENTS
5 lbs potatoes
1 med. onion (or more)
3 tbsp. flour (or matza meal..more if necessary)
3 eggs
salt & pepper to taste.
vegetable oil for frying (not safflower or olive oil)
 
Scrub potatoes & don't peel 'em! Do you realize how many latkes you lose when all those peels are thrown out??? H-m-m-m???...And how many nutrients get thrown out?? Besides, the peel adds even more flavor!
You can grate them if you want--peel 'n all. Or, cut the potatoes in chunks and put them in your food processor with the onion. The regular blade may give a superfine consistency. (This doesn't work for me because they ooze out through the colander holes.) I prefer the grating disc instead (which will not produce a super thin latke, if you like those). Or, you can throw them in your blender with water added. 2 seconds later, POOF!.....they'r grated.
NOW here's the key. Dump the processed batch into the colander (w/small holes) or a large strainer and LEAVE them there! The more they drain the less they'll splatter when frying. (I NEVER remove them from there before frying.) Mix in the eggs, flour and seasonings.
      HEAT fry pan, hot....THEN add about 1/4" of oil. (This prevents food from sticking to the bottom.) When the oil is HOT, drop in large spoonfuls of mixture into the pan and flatten. (If the oil is hot enough, the latkes will immediately float and not stick to the bottom!)
Fry to golden brown, drain well and serve. OY! Gut geschmackt! Gevaltick to the MAX!
Yield: Depends on (1) how many latke thieves you keep out of the kitchen and (2) how many "chazers" there are. Enjoy!
